Avocado and Bell Pepper Salad

 Beautiful. Simple. Super healthy. This is the kind of food that I think everyone should be eating. So easy. So tasty. So not even a little scary. Bon Appetit!

Ingredients:
1 ripe avocado, diced
1 large bell pepper, diced
1/2 cup cherry tomatoes, halved
2 green onions, sliced
2 tablespoons fresh minced parsley or cilantro
Juice of one lemon
Salt and pepper, to taste

Instructions

1. Add all ingredients in a bowl, toss, and enjoy.

Variations:

Add in feta, Kalamata olives, and cucumbers for a Greek version.

Add in some black beans, roasted corn and cilantro and serve it with tortilla chips.

Toss in some canned tuna and chickpeas.
