Veggie Noodles with Spiced Tahini sauce
Ingredients:
- 3 cups spiralized veggie noodles ( i use cucumbers)
- 1 bell pepper
- 1 cup spiced tahini sauce (recipe below)
- chopped cilantro
Directions:
Wash vegetables thoroughly.Using a spiralizer, spiralize your vegetables into noodles. Give your veggie noodles a slight squeeze to release excess water content(especially if using cucumbers).
Cook noodles as needed
Place into a large bowl.
Slice your red bell pepper into thin strips.
Toss together veggie noodles, Tahini sauce and toss until coated.
Top with chopped cilantro.
Serve as a side dish or with a nice piece of grilled chicken or fish.

Spiced Tahini Sauce
- 4 tbs water or coconut milk
- 2 tbs tahini
- 1 tbs fresh lemon juice or apple cider vinegar
- 1 tsp honey or coconut sugar
- 2 garlic cloves, finely minced
- 1 tsp ground turmeric
- 1/2 tsp ground ginger
- 1/8 tsp cinnamon
- 1/2 tsp red chili flakes (use 1/4 tsp each of cayenne and smoked paprika in a pinch)
- 1/4 tsp pepper
- 1/4 tsp sea salt
In a large bowl combine all ingredients (i make this in my food processor).
Whisk/pulse until smooth.
Keep in a lidded container in the fridge for up to 1 week.

You can play around with these seasonings as they pair well with this sauce
