Veggie Noodles with Spiced Tahini sauce

Tahini contains a variety of vitamins and minerals. It’s also rich in anti-inflammatory monounsaturated fats.
The best Tahini is mildly nutty, creamy, and savory—you will want to eat it with a spoon. It’s gentle,subtle and luxurious, with a texture like a silky nut butter.


  • 3 cups spiralized veggie noodles ( i use cucumbers)
  • bell pepper
  • 1 cup spiced tahini sauce (recipe below)
  • chopped cilantro


Wash vegetables  thoroughly.Using a spiralizer, spiralize your vegetables into noodles. Give your veggie noodles a slight squeeze to release excess water content(especially if using cucumbers).

Cook noodles as needed

Place into a large bowl.

Slice  your red bell pepper into thin strips.

Toss together veggie noodles, Tahini sauce and toss until coated.

Top with chopped cilantro.

Serve as a side dish or with a nice piece of grilled chicken or fish.

Spiced Tahini Sauce

  • 4 tbs water or coconut milk
  • 2 tbs tahini
  • 1 tbs fresh lemon juice or apple cider vinegar
  • 1 tsp honey or coconut sugar
  • garlic cloves, finely minced
  • 1 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 1/8 tsp cinnamon
  • 1/2 tsp red chili flakes (use 1/4 tsp each of cayenne and smoked paprika in a pinch)
  • 1/4 tsp pepper
  • 1/4 tsp sea salt

In a large bowl combine all ingredients (i make this in my food processor).

Whisk/pulse until smooth.

Keep in a lidded container in the fridge for up to 1 week.
