This Blackberry Ketchup is the perfect balance of sweet and tart.
Ingredients:
2 cups Blackberries
1/2 cup Apple Cider Vinegar
1/2 cup Water
3/4 packed Dark Brown Sugar
1/2 tsp Ground Cloves
1/2 tsp Ground Ginger
1 tsp ground Cinnamon
1/4 tsp Cayenne
1/2 tsp Smoked Paprika
1/2 tsp Coriander
1/2 tsp Kosher Salt
1/4 tsp Ground Black Pepper
2 tbsp Unsalted Butter
grated rind of 1 whole Tangerine
Directions:
Mix the berries with vinegar and water in a pot.
Bring to a boil.
Lower heat to a simmer and cook 5 minutes.
Strain out seeds, I use cheesecloth
Return to saucepan and add brown sugar, all the spices, salt, butter and grated tangerine rind.
Simmer about 10 minutes, until thickened.
Let cool.
Makes around 2 cups.
Notes:
Good for Beef, Chicken, Venison or Duck.
Add a Jalepeno for a little spiciness.
Add in a 1/4 tsp of Five Spice Powder for a little Asian influence.
Add in some citrus juice and olive oil and make it into a dressing.
